Chocolate pudding with raw coconut balls
I love chocolate. I just do! And I’ve been craving chocolate so much lately. Sure, I never say no to chocolate, but some periods are more intense, for some reason. Especially Spring, which I find so strange? But yep, I crave chocolate every Spring.
Maybe it’s because of the fact that I don’t stuff my face in chocolate during Christmas..? You see, I always hold back during Christmas “to not get fat” (lol), but then after Christmas, I always feel so proud of myself for not indulging, that I reward myself with chocolate. Ugh the weird ways of our minds…
Enough talk about my chocolate cravings and weird ways of indulging or not indulging. Let’s get to the recipe on a healthy chocolate dessert that I made the other day; chocolate pudding with raw coconut balls.
Raw coconut balls
Recipe for approx 8-10
- Oats (approx. 3 dl)
- Fresh dates (approx. 15-20 of them)
- Cacao powder (approx. 1/2 dl)
- Coconut oil (approx. 2 tablespoons)
- Shredded coconut (approx. 1-2 dl)
Mix, and then roll them in shredded coconut. Place in the fridge for a few hours, and voilà, you’ve got yourself a set of healthy, raw coconut balls! Sugar-free and absolutely delicious.
The chocolate pudding is rather simple, but don’t be fooled by the simplicty of it, it’s SO tasty!
Recipe for 2 servings
- Coconut milk with chocolate (this one for example, approx. 5 dl of it)
- Chia seeds (approx 6 table spoons)
Mix the milk with the chia seeds in a jar, then place the jar in the fridge for a few hours. Check on it every now and then, mix it some more, and maybe add
