What I have discovered with banana pancakes is however, that it i’s the topping that makes them! You-have-to-have-a-good-topping in order for the banana pancakes to be successful.
In my early days as a “banana pancake chef”, I played it safe with toppings such as fruit, berries and peanut butter. But in the last years I’ve been more daring, and have tried out some more demanding toppings. Like the chia jam that I used as topping on these banana pancakes!

And finally, the moment you’ve all been waiting for, here comes the recipe for my fluffy and delicious banana pancakes, AND a crazy yummy homemade chia jam! PLUS a tip on a chocolaty topping that all chocoholics will love.
Banana pancakes for 2 persons.
- 4 eggs (preferably organic)
- 2 medium-sized, and very ripe bananas (preferably organic)
Fry in a big pan, on high heat, together with a lot of coconut oil.
Homemade chia jam
- Cherries (about 250 grams)
- 1 very ripe banana
- 2 table spoons of chia seeds
Mix until smooth, then leave it in the fridge for about one hour (this will make the chia seeds swell and the jam to become more “jammy” and thick).
